Jeremy Marshall is brewmaster for the Lagunitas Brewing Company in Petaluma, California, and Chicago, Illinois. Marshall attended the Master Brewers Program at the University of California, Davis in 2003 and successfully completed and passed the Institute of Brewing and Distilling associate membership exam in June 2003. He immediately began working in the brewing industry, and over the course of 14 years, he has worked in packaging, cellar, filtration and brewing. He is currently supervising innovation, R&D, all recipes and improvements in process control.
Marshall has been a member of the Institute of Brewing and Distilling, Brewers Association and Master Brewers Association of the Americas since 2003 and has been a guest speaker at various panels and workshops. He is fascinated with dry hopping technology and also works very closely in connection with hop breeders and processors in the development of new hop varieties and hop processing technologies.
The phylogenetic relationship between hops and cannabis and the similarities in carbon dioxide extraction have recently inspired new work at Lagunitas. A wide variety of novel products exploring both plants has been developed, and as a result, Marshall has participated in several crossover panels, including Craft Beer and Cannabis and The Emerald Cup. He has also given numerous presentations on the terpenes available in both plants and what the two industries can learn from one another.
